Do i need Windows 2008 R2 to update schema or do i need only Windows 2008
itself to update schema ?

Take note that i will be using Windows 2003 R2 ...so should i use windows
2003 r2 to update schema ?

Windows Server 2008 R2 is a Beta product - I'm not sure why you are
considering using its schema update.
Windows Server 2008 schema update is necessary if you are planning on adding
a Windows Server 2008-based domain controller to your existing Active
Directory forest. Based on your post, it appears that you simply want to
take advantage of Windows Server 2003 R2 schema extensions - and if so, you
should be using the adprep from the second CD of Windows Server 2003 R2
installation media...

another question:

1. ignore 2008 r2 as my guys told me it is available when it is not !!!
2. if i update the 2008 schema and if i want to run DFS, can i use windows
2003 r2 OS as DFS instead of using windows 2008 OS ?

As far as I understand, Windows Server 2008 schema extensions include those
introduced in Windows Server 2003 R2 - so yes, you should be able to use
Windows Server 2003 R2 based DFS...
